English Mirror: What is eating with the ears? It means caring for the name: craving the name of a costly thing, showing off one's regard for the guest. That is eating with the ears, not with the mouth. — I have long admired this principle: whenever I have eaten my fill at someone's house, I send my own cook to that kitchen to learn as a pupil. — In forty years I have gathered many fine things. Some my cook mastered; some he got six or seven parts in ten; some only two or three; and some were lost altogether.

Twenty-seventh of February, 2038, a Saturday, ten in the morning, Turpan. Boss Hu's pickup at the gate, two cartons roped in the back: taken from this yard last October, driven to Guangzhou, driven back. On their sides in Alim's black marker: 2037, house two, soft hang. Hu, fifty-odd, from Shanshan, a dozen years buying here, bowed to Abdurehman before he touched the boxes. "Brought back as they were, not a bag touched. Guangzhou opened one bag, squeezed once, and refused them. I refunded. But I'm not easy. I promised you: if soft can keep, I'll buy it at seven-twenty. I bought it; Guangzhou wouldn't. My word went for nothing." Guli had come in from Urumqi with the notebook where, since two Aprils ago, every customer remark carries a bag number. Thirty bags of the soft hang to twenty-odd customers: "soft, sweet, not sticky, the children grab handfuls"; "better than last year, more please"; an old woman of seventy-odd sat in the shop after one raisin and said it tasted like her childhood village, and bought two more bags; one man, "a bit soft, worried it won't keep." Twenty-one good, three worried; a dozen of the twenty-one reordered twenty bags.

"That's my side." "That's mine." Neither called the other wrong. Alim, holding his September page ("hung a little softer, a press comes back half a beat slower"; "taken down two days early; slow to come back, not sticky"; "ask the eaters next year"): "How do I book it, good or bad?" I asked Hu whether Guangzhou had tasted. "Squeezed, soft; the box said soft hang. Soft means damp; damp won't keep." Did they taste? "No." At noon, as Aynur lifted the lid on the polo, a plump, rosy man of seventy-odd in figured silk, fan tucked in his sash in February, stood in the steam with his eyes shut. "Good mutton. The rice fried in mutton fat before it went in. Yellow carrots, not red." Yuan Mei, of Qiantang. "I ate for fifty years." Whenever he ate well at a house he sent his cook to that stove to learn as a pupil; his book records whose each dish was: mastered, six or seven parts in ten, two or three, or lost.

He saw the boxes and laughed. "Your Guangzhou man eats with his ears. Some hosts must serve bird's nest for the costly name and never mind the taste. He's the reverse: hears the word 'soft' and won't eat. Ears again." Hu's moisture meter, calibrated last year: soft 14.0 to 14.2, normal 13.9 to 14.1. "Not damp." The unopened carton, four months on the road and in storage: no mould, no clumps, no sour smell; a press comes back slow, not sticky, exactly Alim's September line. Then the mouth: ten saucers, one raisin each, numbers underneath known only to Guli, who left the room; five tasters blindfolded. Of twenty-five choices, twenty were the soft hang; Hu four of five. He laughed and slapped his thigh: "A dozen years buying and I eat with my ears too. One squeeze, soft, I knock the price down. I never once thought to shut my eyes and eat one." — M.

Memo to file. Turpan, 27 February 2038. Two verdicts, one untasted.

1. The returns. Two cartons marked "2037, house two, soft hang" came back from Guangzhou: one bag opened, one squeeze, refused. Hu refunded, uneasy: he'd promised to pay full price for soft fruit that keeps, and his word "went for nothing."

2. The other end. Guli's notebook, every remark tied to a bag number: thirty bags, twenty-odd customers, twenty-one good, three "too soft, won't keep," a dozen reorders totalling twenty bags; an old woman: tastes like her childhood village. Alim: "Good or bad, how do I book it?" Guangzhou: squeezed, read "soft," concluded damp. Tasted? No.

3. The precedent. Yuan Mei ate for fifty years in his garden outside Nanjing and sent his cook to learn at every stove where he had eaten well; his book records each dish's source and how much was learned: mastered, six or seven tenths, two or three, lost. Among his "don'ts": eating with the ears, serving costly names regardless of taste. Guangzhou had done the reverse: heard "soft" and refused to eat. "Ears again."

4. Damp? Hu's meter (calibrated last year), six readings: soft 14.0–14.2, normal 13.9–14.1. "Not damp."

5. Keeps? The unopened carton had travelled eight days out, a fortnight in Guangzhou, eight days back, a month in Hu's store: four months. No mould, no clumping, no sourness; a press springs back slow, not sticky, as on the September day they came down. "Further than any batch I ever bought. It kept."

6. The mouth. Ten saucers, numbers known only to Guli, order shuffled; Hu, Alim, Aynur, me and Hu's young driver Reyim, blindfolded, choosing between pairs. Twenty of twenty-five picks were the soft hang; Hu four of five; Aynur five of five. Hu: "A dozen years buying and I eat with my ears too."

7. The Wall Street version. A company blew up and halved in a day; another, in a different industry, sharing two words of its name and one letter of its ticker, fell 20% the same day. A week later someone noticed and it crept back. Those who sold that week sold with their ears.

8. Guangzhou, on speaker. Mr Liang: "I didn't taste. The word 'soft' on the box and my mind was made up. Send two more cases with nothing written; I'll taste blindfold first." Hu: "The writing stays. It's the truth."

9. The label. Alim: "2037, house two, soft hang. Moisture 14.1. Four months on the road and back, unspoiled. Down from the rack 28 September." "The word 'soft' stays; soft hang is what I hung. Change the name and the next eater still won't know what he's eating. What I've added is for the buyer's ear. He fears damp and spoilage; so I tell him: not damp, not spoiled, here are the numbers." Liang: "I can see numbers; I'm not afraid of the word."

10. Hu's word. To Abdurehman: soft hang at seven-twenty from now on; "what I said two years ago only counts from today." Abdurehman wrote with his left hand: taste, and underlined it.

11. The book. Alim: "Eaters: Guli's customers, thirty bags, twenty-one good. Hu's side: Guangzhou returned two cases, untasted. Blindfold, twenty of twenty-five chose soft. Booking: untasted doesn't count." Then Hu's two cases go unrecorded? "Recorded: as untasted. An untasted return and a tasted return aren't the same entry."

12. The line, and next. Yuan Mei on his lost dishes: "The ones I never recovered were all dishes someone cooked for me while I just said 'delicious' and never sent my cook to learn." He took a packet of soft hang for his cook to taste. "Ears eat names. Mouths eat food. A seller can't blame the buyer for eating with his ears; give his ears one true sentence, one number they can understand." Guli added after the old woman's line: "She asked if there'd be more next year. I said yes." At bedtime Alim took down the kitchen scale for 10 March: in January the display dimmed and he put in a cheap battery from the town. Zero; zero point one; back to zero. "It seems to jump a bit." Abdurehman watched the scale and did not move.

"What is eating with the ears? It means caring for the name. That is eating with the ears, not with the mouth."
Yuan Mei, the eighteenth-century poet who left office in his thirties and spent fifty years in his garden at Nanjing, wrote the most famous Chinese cookbook, "Recipes from the Sui Garden." Its list of things to avoid includes "eating with the ears": serving costly delicacies for the sake of their names, regardless of how they taste. His preface records something rarer: for each dish, whose kitchen it came from, and how much of it his own cook managed to learn.
Buyers eat with their ears in the reverse direction too. A word on a label, "soft," "subordinated," a name that resembles a troubled company's, can set a price before anyone has tasted, tested or read. The cure is not for the seller to hide the word. Removing an honest label only means the next buyer still does not know what he has.
The better answer is to give the ear something true it can understand: the measurement behind the word, how long the product has kept, what was tested and when. And when the verdicts come back, an untasted rejection should be booked separately from a tasted one.
"Ears eat names. Mouths eat food. Give the buyer's ear one true sentence and a number."
