段一·现身

六月三日,成都,城北。

这个小区是九十年代的房子。


六层,没有电梯。


食堂在一号楼底下,原来是自行车棚。


门口挂一块白底红字的牌子:社区老年助餐点。


里头摆着十一张桌子。


塑料贴面,边上都磨白了。


冯师傅五十五岁,个子不高,穿一件白围裙。


围裙上有洗不掉的油印子。


江姐把马可带进来的时候,是上午十点半。


还没到饭点。


冯师傅在切萝卜。


他抬头看了一眼,把刀放下。


他伸手在围裙上擦了擦。


他说的第一句是:


我不会卖东西。


马可说:


冯师傅。


冯师傅说:


我先说清楚。


他说:


我没有群,我不会拉群。


他说:


我这儿一天来一百八十个人吃饭。


他说:


他们都不在手机上买东西。


马可看了一眼那十一张桌子。


每张桌子上有一个不锈钢的筷子筒。


筒里插着的筷子长短不一,有的是竹的,有的是塑料的。


墙上贴着一张纸,是这一周的菜单。


手写的,字很大。


周一:土豆烧肉,冬瓜汤。


周二:豆腐,白菜。


下面用红笔写了一行:软的,牙口不好的跟师傅说。


马可看着那一行红字。


他心里第一次动了一下。


因为「软的」这两个字,说明有人在这儿分过档。


分档的人不一定会卖东西。


可是分档的人,一定知道他这一百八十个人不一样。


马可问了一句:


冯师傅,牙口不好的有多少?


冯师傅想了一下。


他说:


四十几个。


他说得很快,不用查。


马可又问:


您这四十几个,是怎么记住的?


冯师傅说:


不用记。


他说:


他们坐的位置是固定的。


他指了指靠里那四张桌子。


他说:


牙口不好的坐这边。


他说:


离厨房近,我端软的方便。


马可看着那四张桌子。


这是一个分类。


这个分类没有写在任何地方。


它写在桌子的摆法上。


跟第二座房门框上那一串一样。


东西记着事,人不用记。

“长驱到齐,晨而求见。孟尝君怪其疾也,衣冠而见之,曰:‘责毕收乎?来何疾也!’曰:‘收毕矣。’‘以何市而反?’冯谖曰:‘君云视吾家所寡有者。臣窃计,君宫中积珍宝,狗马实外厩,美人充下陈。君家所寡有者,以义耳。窃以为君市义。’孟尝君曰:‘市义奈何?’……孟尝君不说,曰:‘诺,先生休矣!’”
“后期年,齐王谓孟尝君曰:‘寡人不敢以先王之臣为臣。’孟尝君就国于薛。未至百里,民扶老携幼,迎君道中终日。孟尝君顾谓冯谖曰:‘先生所为文市义者,乃今日见之。’”
English Mirror: Lord Mengchang put out a notice asking which of his retainers understood accounts and could go to Xue to collect his debts. Feng Xuan wrote: "I can." … Arriving at Xue, he had the officers summon every debtor to bring their tallies to be matched. When all the tallies had been matched, he stood up, and falsely claiming his lord's authority made a gift of the debts to the people, and burned the tallies; and the people cried out, ten thousand years. — He drove straight back to Qi and asked audience at dawn. Lord Mengchang, startled at the speed, dressed and received him: "Are the debts all in? Why so quick?" "All in." "And what did you buy with them?" Feng Xuan said: "You told me to look at what your house was short of. It seemed to me that your palace is heaped with treasure, your outer stables full of dogs and horses, your lower halls full of beauties. What your house lacks is righteousness. So I bought righteousness for you." "Bought righteousness how?" … Lord Mengchang was not pleased, and said: "Very well. Enough, sir." — A year later the King of Qi said: "I do not presume to keep the late king's minister as my minister." Lord Mengchang went out to his fief at Xue. While he was still a hundred li away, the people came supporting their old and leading their children, and met him on the road, all day long. Lord Mengchang turned to Feng Xuan and said: "What you bought for me, sir — today I have seen it."

马可问:

江姐说:


七个团长等第二批。


马可说:


第二批要晚十二天。


江姐说:

马可说:


首发是最好的那一批。


江姐说:

马可站在那儿。


他心里过的是一句他一直记着的话。


那句话是子产说的:你有一块好锦,不会让人拿它学裁衣。


这两百袋,是他今年最好的一批。


给一个从来没有卖过他的货、也不打算卖的人。


马可问:


江姐,为什么?


江姐说:


你自己去问他。


她说完往外走,走到门口又回过头。


她说:


还有一句。


马可说:


您说。


江姐说:


你要是不给,我也不逼你。


她说:


七个团长照卖,今年你能多挣两千。


她说:


你这三年一直在挣两千。


这一句说完她就走了。


马可站在食堂中间。


他知道江姐这句话不是激他。


江姐从来不激人。


她只是把一个数说了出来。


二〇二八年,两千四百四十四。


二〇二九年,加上咨询那八千,还是负的。


今年上半年,一千七百多。


三年了,每一年他都在把一件事做得更对。


每一年那个数都差不多。


做对和挣钱,中间还差着一样东西。


他不知道那是什么。


段三·事件主体

冯谖是那天中午出现的。


十一点半,食堂开饭。


人一下子多起来。


马可端着一个不锈钢盘子,坐在最角上那张桌子。


对面坐下来一个人。


四十来岁,穿的是很旧的布袍,袖子磨破了一块,没有补。


他手里端的也是一个盘子。


他先吃了两口,才抬头。


他说的第一句是:


这个萝卜炖得好。


马可说:


是。


那个人说:


你今天心里不痛快。


马可说:


有一点。


那个人说:


冯谖。


那天中午,冯谖先说了收债那件事。


他说:


孟尝君贴了一张告示。


他说:


问门下的客,谁会算账,能去薛地收债。


马可问:


您去了?


冯谖说:


我签了个名。


他说:


我在他门下待了很久,一直没有事做。


他说:


那时候大家都笑我。


马可问:


薛地怎么样?


冯谖说:


穷。


他说:


十户里,还得上的三户。


他说:


还不上的七户,把契藏起来,见了官就跑。


马可问:


您怎么办的?


冯谖说:


我叫他们都来。


他说:


带着契来,合券。


他放下筷子。


他说:


契是一分两半的。


他说:


债主一半,欠债的一半。


他说:


两半对上,才算数。


他抬起头。


他说:


那一天,几百个人排队,一个一个对。


他说:


对完了,我站起来。


他说:


我说,君上说了,这些债不要了。

然后我把契烧了。


马可问了一句。


他说:


先生,那是您假传的。


冯谖说:


是。


他答得很干脆,一点也没有绕。


马可问:


孟尝君没有罚您?


冯谖说:


他很不高兴。

我第二天一早就回去了。

他问我,你拿钱买什么回来了?

他说了那一句,马可当天在本子上抄了三遍:

马可问:

冯谖说:


不信。


他说得很平常。


他说:


他说了四个字:先生休矣。


马可问:


什么意思?


冯谖说:


行了,您歇着吧。


马可笑了一下。


冯谖说:


你笑什么?


马可说:


这句话我今天早上差点说出口。


冯谖点了点头。


他说:


该说。


他说:


那笔债是他的钱。


他说:


我烧了,他一分没有拿到。


他抬起头。


他说了一句,马可停了很久:


买义这个事,说的时候都是空话。


他说:


要等一年。


马可问了一句。


他说:


先生,那一年里您怎么过的?


冯谖说:


不好过。


他说:


门下的人都笑我。


他说:


说我拿主人的钱,买了两个字。


马可问:


您没有跟他们解释?


冯谖说:


解释不了。


他说:


那时候我说什么都是我说的。


他说:


要等薛地那些人自己走出来。


他抬起头。


他说了一句,马可当天在本子上抄了两遍:


你花钱买的东西,要是只有你一个人看得见,那就是还没有买到。


他说:


买到了的那一天,是别人替你说出来的那一天。


那天中午,冯谖说了一年以后。


他说:


齐王换了想法。


他说:


他跟孟尝君说,我不敢用先王的臣子。


马可问:


罢了官?


冯谖说:


罢了。


他说:


只能回薛地去。


他说:


车走到离薛地还有一百里。


他停了一下。


他说:


路上全是人。


他说:


扶着老的,牵着小的。


他说:


从早上迎到晚上。


马可问了一句。


他说:


先生,那些人认得他吗?


冯谖说:


大半不认得。


马可说:


那他们迎的是谁?


冯谖说:


迎的是那一天。


他说:


那一天几百个人排队合券。


他说:


每一个人都亲手把自己那半张递上去过。


他说:


递上去,对上,烧了。


他抬起头。


他说:


那一天他们手上是空的。


他说了一句,马可听完把筷子放下了:


手上空了以后,人记得比欠着的时候还牢。


马可问:


他说什么了?


冯谖说:


他回过头看着我。


他说:


他说,先生为文市义者,乃今日见之。


他把盘子推开一点。


他说了走之前那一句:


一年以前那句空话,那天变成了一条路。


段四·钩子结尾

七月一日,马可又去了那个食堂。

离首发那两百袋发出去,二十四天。


他先在门口站了一会儿。


门边的桌子上摆着三个小碟子。


碟子里是杏干。


不是整袋,是拆开的,一碟里六七粒。


每张桌子上都有一碟。


十一张桌子,十一碟。


马可进去。


冯师傅在后厨。


他看见马可,把手在围裙上擦了擦。


他说:


你来对账。


马可说:


我来看看。


冯师傅从抽屉里拿出一个本子。


他说:


卖了五十九袋。


马可说:


两百袋。


冯师傅说:


剩下一百四十一袋,拆了。


他指了指桌上那些碟子。


马可走过去,从最近那一碟里拿了一粒。


放进嘴里。


是他自己的货。


六月十八号那一批,第二座土房出的。


他嚼了两下,停住了。


碟子是敞着的,在桌上放了多久他不知道。


这一粒有点发干。


他抬头问:


冯师傅,这个碟子多久换一次?


冯师傅说:


一顿一换。


他说:


吃剩的我倒掉。


马可问:


一天倒多少?


冯师傅想了一下。


他说:


头几天不剩。


他说:


后来每天剩两三碟。


这一句马可记住了。


因为剩下的那两三碟,也是数。


是他从来没有拿到过的一种数。


他所有的数,都是买了的人给的。


吃了两口不吃了的人,从来不在他的表里。


马可站在那儿,把这个数在心里过了一遍。


两百袋,出厂到成都,他的成本是每袋十五块二毛五。


一百四十一袋,两千一百四十九块。


卖出的五十九袋,收回一千五百三十四。


首发那两百袋,他手上净出去六百一十五。


再加上这两百袋本来能挣的。


要是给七个团长,两百袋是两千一百五十。


一来一去,两千七百六十五。


这个数比他今年上半年的净利多。


马可把这个数算完,抬起头。


他说:


冯师傅,一百四十一袋,您是打算怎么算?


冯师傅说:


我赔。


他说得很快。


他说:


我一个月挣三千六。


他说:


我一个月给你还三百。


他说:


七个月还完。


这一句说完,他把那个本子推过来。


他说:


你先看这个。


那个本子马可翻了四十分钟。


是一个学生用的横格本。


每一页上面写一个名字,下面写一句话。


一共九十几页。


名字都是那种老人的名字。


建国。桂芳。宗汉。秀云。


每个名字后面有一个数字,是年纪。


七十一。六十八。八十三。七十六。


下面那一句话,是他们吃完以后说的。


冯师傅在旁边说:


我不问他们好不好吃。


马可抬起头。


冯师傅说:


问好不好吃,都说好。


马可说:


那您问什么?


冯师傅说:


我问,跟你们以前吃的比,哪儿不一样。


马可手上的本子停住了。


这一句他去年十月在电话上用过。


用了两天,二十四个电话。


冯师傅用了二十四天,九十几个人。


而且这九十几个人里头,有六十二个七十岁往上的。


九十几句话里头,有一句出现了十七次。


十七次,不同的人,不同的说法,可是意思是一样的。


马可一页一页往下翻,越翻越慢。


第十一页写的是:这个不酸。


第十九页写的是:以前那个是带酸的。


第二十七页写的是:太甜了,吃两个就够了。


第四十页写的是:小时候的杏干,牙根发麻。


第五十六页写的是:这个像蜜饯,不像杏干。


第七十三页写的是:好吃,可是不是那个。


马可把本子合上,放在桌上。


他坐在那张塑料贴面的桌子边上,很久没有说话。


因为这十七句话,指的是他三年来做的每一个决定。


收购的时候挑甜的。


因为团长的群里,说酸的人多,说甜的人少。


去年他还专门跟阿不都热合曼说过一句:偏酸的那几串,留着自己吃。


这三年,他一直在往一个方向走。


这个方向是买的人告诉他的。


买的人是三四十岁的人。


三四十岁的人吃到的杏干,本来就已经是甜的了。


他们说的「好」,是跟他们记得的那个比。


他们记得的那个,也是甜的。


这是一个越走越远的圈。


这个圈里没有人能告诉他走偏了。


马可把本子翻回第一页。


第一页写的名字是「建国,七十九」。


下面那一句是:吃得出是新疆的。


这一句他刚才翻过去了,没有停。


现在他停下来。


他问:


冯师傅,这个老人怎么吃得出来?


冯师傅说:


他六几年在新疆当过兵。


他说:


待了九年。


马可把这一页拍了照。


然后他往后翻,一页一页找。


九十几页里,写着「在新疆待过」的,有四个。


这四个人的那一句,跟别人不一样。


别人说的是酸和甜。


这四个人说的是别的。


一个说:这个晒得太干了。


一个说:以前那个掰开是软心的。


一个说:这个没有烟味,那时候屋里烧火。


一个说:好,这个是好的,就是太齐了。


最后这一句马可看了三遍。


太齐了。


他想起四月二十六号在第五座房里那张纸。


十八个位置,十六个「差一点」。


他当时把这个当成好消息。


上下一样,是恒温房的好处。


一个七十九岁的老人吃了一口,说的是:太齐了。


马可在本子边上写了一行:


「齐是我要的。」


他停了一下,写完下半句:


「不一定是吃的人要的。」


写完这两行,马可靠在椅背上。


他知道这两行现在还只是两行。


一个人说太齐了,说明不了什么。


一百八十个人里,四个在新疆待过。


四个里,一个说太齐。


这个样本太小。


可是有一件事是确定的。


这四个人的四句话,跟别的九十几句不一样。


不一样在哪儿?


别人说的是「跟我记得的比」。


这四个人说的是「跟当地的比」。


这是两把不同的尺。


马可在纸上写了一句:


「我这三年,一直在跟买的人比。」


他停了一下,写完下半句:


「我从来没有跟做的人比过。」


做的人是常,是阿不都热合曼。


这两个人自己吃的是哪一种?


去年他跟阿不都热合曼说,偏酸的那几串留着自己吃。


老人当时点了点头。


马可现在才想到一件事。


老人为什么点头点得那么快。


因为老人本来就是留那几串的。


因为圈里所有人的尺,都是同一个年代做出来的。


马可抬起头,问了一句。


他说:


冯师傅,您这一百四十一袋,是从哪一天开始拆的?


冯师傅说:


第一天。


马可问:


您没打算卖?


冯师傅说:


卖不动。


他说得很坦白。


他说:


我这儿的人,一袋二十六,他们不买。


他说:


他们一顿饭才五块。


马可问:


那五十九袋是谁买的?


冯师傅说:


他们儿女。


他说:


老人吃了,回去跟儿女说。


他说:


儿女周末来看老人,顺手买两袋。


马可问:


那您拆一百四十一袋,是为了卖那五十九袋?


冯师傅说:


不是。


他站起来,去把火关了。


回来的时候他手里拿着一双筷子。


他说:


我开这个食堂第六年了。


他说:


这一百八十个人,天天来。


他说:


他们身上有一样东西,别处买不到。


马可问:


什么?


冯师傅用筷子敲了敲桌子上那个碟子。


他说:


他们的舌头是五十年前定的。


马可问:


冯师傅,您怎么想到问那一句的?


冯师傅说:


哪一句?


马可说:


跟以前比哪儿不一样。


冯师傅说:


这个不是我想的。


他说:


头两年我问过好不好吃。


他说:


天天做,天天有人说好吃。


他说:


后来有一个老太太没来。


马可问:


为什么?


冯师傅说:


她儿子来跟我说的。


他说:


说我这儿的菜她咽不下去。


他说:


她天天跟我说好吃,说了一年多。


冯师傅把筷子放下。


他说:


从那以后我就不问好不好吃了。


马可问:


那个老太太后来回来了吗?


冯师傅说:


回来了。


他说:


我给她单做。


马可问:


做什么?


冯师傅说:


一样的菜,多炖二十分钟。


他说:


她吃了三年,去年冬天走的。


他说这一句的时候手上在擦桌子,没有停。


马可没有接话。


过了一会儿冯师傅说:


她那一页我还留着。


他说:


在本子最前头。


七月一号那天下午,马可在食堂坐到关门。


下午两点半,人都走了。


冯师傅在拖地。


马可帮他把椅子搬到桌子上。


搬到第七张桌子的时候,马可说了一句。


他说:


冯师傅,那三百块一个月不用还了。


冯师傅说:


要还。


马可说:


这一百四十一袋,我买到东西了。


冯师傅停下拖把。


他说:


你买到什么了?


马可想了一下怎么说。


他说:


我这三年,一直照着买我东西的人的舌头调。


他说:


我不知道我调偏了。


他说:


因为我周围没有一个人是照老尺长的。


冯师傅听完,没有说什么大道理。


他把拖把往桶里一杵。


他说:


那你下一批,做几袋酸的。


他说:


放我这儿。


他说:


我给他们尝。


马可问:


要几袋?


冯师傅说:


三十袋。


马可问:


您怎么知道要三十袋?


冯师傅说:


一袋分五碟,一碟六七粒。


他说:


十一张桌子,一天十一碟。


他说:


两袋多一点。


他说:


发半个月,三十袋。


他说得很顺,像早就算过。


马可问:


为什么是半个月?


冯师傅说:


头三天他们尝新鲜,说什么都不算。


他说:


中间那十天说的才算。


他说:


最后两天他们吃腻了,说的又不算。


马可把这三句写在手机备忘录里。


他写完抬起头。


他说:


冯师傅,这个您六年前就知道?


冯师傅说:


这个是做饭的知道。


他说:


一样新菜,头三天都说好。


他说:


尝完我还记。


那天晚上,马可给江姐打了个电话。


电话一接通,他先问了那一句。


他说:


江姐,您怎么知道的?


江姐说:


我不知道。


马可说:


那您为什么让我给他?


江姐在那头停了几秒。


她说:


我上个月去他那儿吃过一次饭。


她说:


我看见他拿个本子在记。


她说:


记的是每个老人今天吃了几口,剩了什么。


她说:


记了六年。


她说:


我不知道那本子能干什么。


她停了一下。


她说了一句,马可当天晚上把它写在了本子的最后一页:


我只知道,一个记了六年没人看的本子,早晚有一天要有人来看。

附录一·Dongpo's Note

Third of June, a nineties compound in the north of the city, six storeys and no lift. The canteen is under Building One in what used to be the bicycle shed. Community elderly meal point, white board, red characters. Eleven tables, plastic laminate worn white at the edges.

Feng, fifty-five, short, white apron with oil marks that will not come out, cutting radish at half past ten. He put the knife down and wiped his hands and got in first: I don't know how to sell things. And: let me be clear. I have no group and I don't know how to start one. And: a hundred and eighty people eat here a day. None of them buy anything on a phone.

Jiang's terms, delivered standing: the first two hundred bags of the June apricots, all of them, to Feng. And the seven leaders? The seven wait for batch two. That's twelve days later. I know. The first release is the best fruit of the year. I know. Why? Go and ask him yourself. What went through my head was Zichan on the young official: you have a good brocade; you do not let a man learn tailoring on it.

Feng Xuan sat down opposite me at eleven thirty with a steel tray, forty-odd, an old cloth robe worn through at the sleeve and not mended. Two mouthfuls before he looked up. This radish is well stewed. It is. You're unhappy today. A little. Feng Xuan.

Xue. Lord Mengchang put out a notice: which of you understands accounts and can go and collect at Xue. You went? I put my name down. I'd been in his household a long time with nothing to do. They laughed at me then. How was Xue? Poor. Of ten households, three could pay. The other seven hid their tallies and ran when they saw an officer. So? I summoned them all. Bring your tallies, match them. And, putting his chopsticks down: a tally is split in two. Creditor holds one half, debtor the other. Only when the two halves meet does it count. And: hundreds of them queued that day and we matched them one by one. When it was done I stood up and said: my lord says these debts are forgiven. And I burned the tallies.

You had no authority. No. Flat, no evasion. Did he punish you? He was very displeased. I drove straight back and asked audience at dawn; he thought it odd, so fast. He asked: are the debts in? I said in. He asked: what did you buy with them? And? I said: you told me to see what your house lacked. Your palace is heaped with treasure. Your outer stables are full of good dogs and horses. Your lower hall is full of beauties. And, three times into the book: what your house lacks is righteousness. So I bought it for you.

Did he believe you? No. Evenly. He said four words: enough, sir, that will do. I laughed. What are you laughing at? I nearly said the same thing this morning. He nodded. You should have. That debt was his money. I burned it and he got not one coin. And: buying righteousness is an empty phrase at the time it is said. You have to wait a year.

And the year: the King of Qi said he did not presume to keep the late king's minister. Dismissed. Nothing to do but go out to Xue. And? A hundred li short of it the road was full of people. Holding up the old ones, leading the small ones. They met him from morning until night. And he said? He turned round and looked at me. He said: what you bought for me, sir — today I have seen it. Pushing the tray away, before he left: an empty phrase a year earlier had turned into a road. — M.


附录二·Marco's Memo

Memo to file. Chengdu, 3 June – 1 July 2030. First release, 200 bags, consigned to Feng's elderly meal point on Jiang's insistence.

1. The account, stated worst-first. 200 bags at my landed cost of ¥15.25 = ¥3,050. Sold: 59 bags → ¥1,534 back. Opened and put out free on the tables: 141 bags = ¥2,149 of goods gone. Net cash out on the consignment: ¥615. Plus the ¥2,150 of margin those 200 bags would have earned through the seven leaders. Combined swing ≈ ¥2,765, which is more than my entire first-half net. — Feng, before I had finished the arithmetic and before I had said a word: "I'll pay. I make thirty-six hundred a month. I'll give you three hundred a month. Seven months." He had the schedule ready.

2. And then he pushed a notebook across. A student's ruled exercise book. Ninety-odd pages. One name per page, an age, and one sentence. Jianguo 71. Guifang 68. Zonghan 83. Xiuyun 76. And his method, which he explained without being asked and which I have spent nine months arriving at by a much more expensive route: "I don't ask them if it's nice. Ask if it's nice and they all say nice." Then what do you ask? "I ask: compared with what you used to eat, what's different." I ran that question over two days and twenty-four phone calls in October. He ran it over twenty-four days and ninety-odd people, sixty-two of them over seventy.

3. The finding, and it is the largest one in three years. One sentence recurs seventeen times in different words: — p.11 这个不酸 — this isn't sour. — p.19 the old ones had sourness in them. — p.27 too sweet; two is enough. — p.40 the apricots when I was small set your teeth on edge. — p.56 this is like a preserve, not like apricot. — p.73 it's good, but it isn't that.

4. Why I could not have found this, ever, with the instruments I had. — I select for sweetness at purchase, because in the leaders' groups the people who say "sour" outnumber the people who say "sweet." Last year I explicitly told Abdul Rahman to keep the sourer strings for himself. — My buyers are in their thirties and forties. The apricots they remember were already sweet. When they say "good," they mean good against a reference formed in the 1990s. Every measuring instrument I own — refund rate, repeat rate, the leaders' reports, my own tongue — was calibrated inside the same twenty years. A closed loop drifting in one direction with nothing inside it able to detect the drift. This is Chang's line five again, at a different scale: a standard drawn each year from the previous year's accepted batch will ratchet, and the ratchet is invisible from inside. Chang's defence is to sample the middle. Mine was nothing at all, because I did not know I had a standard.

5. What the 141 bags actually bought. Sixty-two tongues calibrated in the 1960s and 70s, in one room, five days a week, willing to answer a comparison question. There is no price at which that is purchasable and no dataset in which it exists. The seventeen sentences were not the by-product of a failed sale; they are the only thing on the premises that was not for sale. Feng's own account of why he opened them, given with a pair of chopsticks tapping the dish: "I can't sell them. My people won't pay twenty-six a bag; their whole meal is five." Then who bought the 59? "Their children. The old ones eat here and tell their children; the children come at the weekend and buy two bags." So the 141 were to sell the 59? "No." And: "I've run this canteen six years. A hundred and eighty of them, every day. They have something on them you can't buy anywhere else." What? "Their tongues were set fifty years ago."

6. Settlement. I told him to stop the ¥300 a month. He refused — "it has to be paid" — until I said what the 141 bags had bought, at which point he did not argue the point, he issued an instruction: "Then make a few sour ones in the next batch. Leave them here. I'll give them out. I'll write it down again." Agreed: next run, 30 bags selected for acidity, unlabelled, to Feng, free. He keeps the book. ¥300/month cancelled.

7. Jiang, by phone that night. How did you know? "I didn't know." Then why him? "I ate there last month. I saw him writing in a notebook. He records how many mouthfuls each old person ate and what they left. Six years of it. I don't know what that notebook is for." And then, which is going on the last page of this year's book: "I only know that a notebook kept for six years that nobody reads is going to be read by somebody sooner or later." She gave away my best two hundred bags on the strength of seeing a man keep a record with no reader. Which is the thesis I have been carrying since Dunhuang, arriving from the other direction and out of somebody else's mouth.

8. Open question I am not going to resolve this month. If the old standard is sour and the paying market is sweet, there is no obvious commercial conclusion. Sixty-two people over seventy are not a market. What they are is a reference — and I have just discovered that mine has been moving for three years. What to do about that is next month's problem, and it starts with thirty unlabelled bags.

The debts were real, the money was his lord's, and the man sent to collect them came back the same week having collected nothing. He had summoned every debtor in the fief to bring their tallies — a tally is split in two; creditor holds one half, debtor the other; only when the two halves meet does it count — matched them one at a time in front of hundreds of people, and then stood up, announced a forgiveness he had no authority to announce, and burned the lot.
His lord was not moved by the explanation. He said four words: enough, sir, that will do. And the man who had burned the tallies agreed, at a distance of two thousand years, that this was the correct response. That debt was his money. I burned it and he got not one coin. And: buying righteousness is an empty phrase at the time it is said. You have to wait a year.
A year later his lord was dismissed from office and had nowhere to go but the fief whose debts had been burned. A hundred li short of it the road was full of people, holding up the old ones and leading the small ones, and they met him from morning until night.
The modern version cost two hundred bags of the year's best fruit, consigned to a man who opened a hundred and forty-one of them and put them out free on the tables of a canteen where the whole meal costs five yuan. He had a repayment schedule ready before he was asked for one.
He also had an exercise book. One name a page, an age, one sentence. And a method: I don't ask them if it's nice. Ask if it's nice and they all say nice. What he asks instead is: compared with what you used to eat, what's different.
Seventeen of the ninety-odd sentences said the same thing in different words. This isn't sour. The old ones had sourness in them. It's good, but it isn't that.
The man who had grown, bought, packed and sold the fruit had been selecting for sweetness for three years, because that is what his customers asked for, and his customers were forty years old, and the apricots they remembered were already sweet. Every instrument he owned had been calibrated inside the same twenty years.
Asked why he had opened bags he could have sold, the cook tapped the dish with his chopsticks. They have something on them you can't buy anywhere else. Their tongues were set fifty years ago.
